What is “Seafood Company Nousui-Shop”?

“Seafood Company Nousui-Shop” is the company which is established by Nousui-Kai (the alumni accociation of Niigata Kaiyo Senior High School) and Itoigawa city government in Niigata, Japan. The main purpose is to give Niigata Kaiyo High School students practical opportunities to learn manufacturing food products and marketing. Our activity has drawn great deal of media attention. The products has gained a reputation for high quality, and therefore, received several national-level awards.

Niigata Kaiyo Senior High School, located in Nou area in Itoigawa city, is a public high school, whose former school was opened back in 1899. The school is specialized in fishery science and its curriculum is rather unique. Every student belong to one of the four distinct courses; cultivation, food science, navigation/fishing, and marine environment. Using the facilities of Seafood Company Nousui-Shop, students (majoring in food science) produce some of the processed marine products they developed for commercial purposes, and think about how to sell well through marketing and publicity. Nousui-Shop can be said to be an ideal place for students to learn manufacturing and running a business at the same time in an authentic way.

While much of the business of Nousui-Shop is currently operated by students, we believe the quality of our products are relatively high in Japanese market as it was proved by the awards we've got. Using fresh raw materials, each product is manufactured nicely and carefully. Please enjoy our products feeling the blessing of the god of the sea. That consequently contributes to grow a future leader in the industry.

Salmon Fish Sauce, "Saigo-no-itteki"

Niigata Kaiyo Senior High School students produced a fish sauce called “Saigo-no-itteki” (it means “the last drop” in Japanese) in 2013. They started developing it as a school project in order to maximize the use of the locally caught salmon.

This variety of salmon has a unique flavor because it grows up and gets nice and fat in the cold northern ocean. Its texture is also unique because it becomes nicely tightened when going up the stream created by the rough geographical feature of Itoigawa. This is the ideal ingredient for a rich flavored fish sauce.

The name of the product, “Saigo-no-itteki (= the last drop)” has two messages. One is our respect to the salmon which ends its life in Itoigawa. The other is that if you put a drop of it in the last step of cooking, everyone will love your dish more.

Also, this product is related to maintain the sustainability of the local river, the Nou. By managing the beautiful forest and clear stream, and by releasing salmon fry, we show our respect for the nature that gives us the great salmon. When you enjoy our fish sauce, we hope you can feel a touch of the rich environment in Itoigawa city.
